Does anyone know how to make a Red Chili Burro enchillada style like you would find in Phoenix AZ restaurant's?

I love the way they make red chili burro's in a few of the mexican food restaurants around Phoenix AZ. I live in Cali and the closest thing to it that I have found is a Chili Colorado burrito but they don't seem to be quite like the ones from out there. If there is anyone from the Phoenix area who knows how to make these I would love to hear from you. Thank you.
